Beyond tradition or innovation, it is inspiration and emotion that matter!!
With a renewed concern to support the struggle against global warming along with exploring innovative vinification methods for white wines, Laure wanted, for the past few years, to create a skin maceration dry wine.
It took numerous tastings involving winemakers friends from France and abroad along with substantial research and refinements but in 2019 that we have created our first Orange Wine.
Inspired by the winemakers of several mediterranean countries (Italy, Croatia, Slovenia and Georgia) that have long mastered the vinification of potent varietals from warm climate conditions, we decided to use this secretive method : the skin maceration of a white varietal to produce a fresh, digestible and truly amazing wine.
Empreinte 2019 : the birthyear of an Orange Wine, a skin maceration offspring of the Pinot Gris varietal, born from the granitic terroir of Ammerschwihr and imprinted by its winemaker.
High in polyphenols, bright with subtle aromas, the wine exhibits a strong character and will offer surprising pairings along a multi-course meal or enhance sushis, spicy dishes or an elaborate assortment of cheeses.
